Barber Pole Sandwich

2 - slices bread

2 - Tbsp butter

1 - Tbsp Tio Robertos Raspberry Chipotle

1 - slice Cheddar cheese

Pulled Pork Sandwiches

1 – Pork butt roast (5 – 7 lbs)

1 – can diced tomatoes with green chilies

1 – can diced or sliced peaches

1 – cup ginger ale (not diet)

Salt and pepper to taste

Spray a slow cooker with cooking spray and place the roast, fat side up, in the pot.  Pour tomatoes, peaches, and ginger ale over the roast.  Season with salt and pepper; cover and cook on low for 10 – 12 hours.

Remove the roast from the pot and discard the layer of fat on top.  Using two forks, shred the meat.  Put the pulled pork in a bowl and add about a cup of the juices from the pot.  Stir to coat. Serve the pulled pork on sandwich buns with Tio Robertos Peach Piquin.

Possible additions to the sandwich are cole slaw and barbeque sauce.

1 – lb ground beef

1 – lb ground turkey

1 – onion, finely diced

3 – cloves garlic, minced

3/4 - cup corn chips, crushed

¼ - cup milk

½ - cup Tio Robertos Jalapeno Jelly

1 - egg

2 – tsp chili powder

½ - tsp cumin

1 – tsp salt

1 – tsp pepper

 

Place corn chips, milk, jelly, and egg in a bowl and let sit for five minutes.  Add onion, garlic and ground meats.  With your hands, knead the ingredients together.  Add spices and continue kneading until combined.  Form patties and cook as desired.
